1 pound ground chicken

1 cup fresh spinach, finely chopped

1 cup white cheddar cheese, grated

1/2 cup breadcrumbs (preferably panko for extra crunch)

1 clove garlic, minced

1 small onion, finely chopped

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Burger buns

Lettuce, tomato, and other desired toppings (for serving)

Instructions
 

In a large mixing bowl, combine the ground chicken, chopped spinach, grated white cheddar cheese, breadcrumbs, minced garlic, chopped onion, Dijon mustard, salt, and pepper. Mix until all ingredients are evenly incorporated, but do not overmix.

    Divide the mixture into equal portions and shape them into patties (about 4-6, depending on the desired size).

      Heat the olive oil in a skillet over medium heat. Once hot, add the chicken patties and cook for about 5-6 minutes on each side, or until the internal temperature reaches 165°F and the burgers are golden brown.

        While the patties are cooking, toast the burger buns in a toaster or on a dry skillet until lightly golden.
