Ingredients

2 pounds ground beef

1 cup mashed potatoes (prepared, creamy)

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup breadcrumbs

1/4 cup milk

2 large eggs

1 teaspoon Worcestershire sauce

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup chopped green onions (for garnish)

Additional shredded cheese for topping (optional)

BBQ sauce (for drizzling, optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Sauté Aromatics: In a small skillet, sauté the chopped onion and minced garlic over medium heat until translucent (about 5 minutes). Remove from heat and let it cool slightly.

Combine Ingredients: In a large mixing bowl, combine the ground beef, prepared mashed potatoes, shredded cheddar cheese, crumbled bacon, sautéed onion and garlic, breadcrumbs, milk, eggs, Worcestershire sauce, paprika, salt, and black pepper. Mix until just combined, being careful not to overmix.

Shape the Meatloaf: Transfer the meat mixture into a loaf pan, shaping it into an evenly packed loaf. If you prefer, you can shape it into a freeform loaf on a baking sheet lined with parchment paper.

Add Toppings: If desired, sprinkle extra shredded cheese over the top of the meatloaf for an extra cheesy crust.

Bake: Place the meatloaf in the preheated oven and bake for about 1 hour, or until the center reaches an internal temperature of 160°F (71°C). If you’re using BBQ sauce, drizzle it over the meatloaf during the last 10 minutes of baking.

Rest Before Slicing: Once done, remove the meatloaf from the oven and let it rest for 10 minutes. This helps the juices redistribute and makes slicing easier.

Serve: Slice the meatloaf and serve warm, garnished with chopped green onions. Pair it with your favorite side dish or enjoy it as a hearty sandwich.
