Tuscan Chicken Pasta Recipe

12 oz (340g) penne pasta

2 tbsp olive oil

1 lb (450g) boneless, skinless chicken breasts, sliced into strips

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1/2 cup heavy cream

1/2 cup grated Parmesan cheese, plus extra for serving

1 tsp Italian seasoning

1/4 tsp red pepper flakes (optional)

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

    Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken strips with salt and pepper. Add to the skillet and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Then, add the cherry tomatoes and cook until they soften, about 3-4 minutes. Stir in the spinach and cook until wilted.

        Combine Ingredients: Reduce heat to low. Add the cooked chicken back into the skillet, followed by the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until everything is well combined. If the sauce is too thick, add some of the reserved pasta water to reach desired consistency.

          Add the Pasta: Add the cooked penne pasta to the skillet, and toss to coat the pasta evenly with the sauce. Allow everything to heat through for about 2-3 minutes.

            Serve: Plate the Tuscan chicken pasta and garnish with extra grated Parmesan cheese and fresh basil leaves. Serve immediately, and enjoy your delightful dish!
