Ingredients

8 oz. spaghetti or linguine

4 tablespoons unsalted butter

6 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon oyster sauce (optional for an umami kick)

1 tablespoon fish sauce (optional)

2 tablespoons chopped fresh parsley (or scallions)

1 teaspoon red pepper flakes (adjust for heat)

Freshly cracked black pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions

Cook the Noodles: In a large pot, bring salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the noodles.

Prepare the Sauce: In a large skillet over medium heat, melt the butter. Once melted and bubbly, add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

Mix in Seasonings: Add the soy sauce, oyster sauce (if using), fish sauce (if using), red pepper flakes, and a splash of the reserved pasta water. Stir to combine and let it simmer for a minute, allowing the flavors to marry.

Toss the Noodles: Add the drained noodles to the skillet, tossing them in the garlic sauce until they are well-coated. If the mixture is too dry, add more reserved pasta water as needed to reach your desired consistency.

Finish with Freshness: Remove from heat and stir in the chopped parsley or scallions, along with freshly cracked black pepper.

Serve: Plate the garlic noodles, garnish with additional parsley or scallions if desired, and sprinkle with grated Parmesan cheese. Enjoy them hot!
