Ingredients
  

1 lb (450g) chicken thighs, boneless and skinless, cut into bite-sized pieces

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1/2 cup red bell pepper, sliced

1/2 cup yellow bell pepper, sliced

1/2 cup onion, thinly sliced

2 cloves garlic, minced

1 tablespoon ginger, freshly grated

1 tablespoon brown sugar

2 tablespoons sweet chili sauce

1 tablespoon sriracha (or more, to taste)

1 tablespoon lime juice

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the chicken pieces with soy sauce, fish sauce, and cornstarch. Mix well to ensure the chicken is fully coated. Allow it to marinate for at least 15 minutes.

    Prepare the Sauce: In a separate bowl, mix the brown sugar, sweet chili sauce, sriracha, and lime juice. Set aside.

      Cook the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until the chicken is golden brown and cooked through.

        Add Vegetables: Add the sliced bell peppers, onion, garlic, and ginger to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

          Combine with Sauce: Pour the prepared sauce over the chicken and vegetables. Stir well, letting it simmer for another 2-3 minutes until everything is evenly coated and heated through.

            Serve: Remove from heat and garnish with fresh cilantro. Serve hot with lime wedges on the side and enjoy with steamed jasmine rice or noodles.
