2 large red onions, thinly sliced

3 tablespoons olive oil

2 tablespoons sumac powder

1 teaspoon sea salt

1 tablespoon fresh lemon juice

1 teaspoon honey (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large bowl, combine the thinly sliced red onions and sea salt. Toss well and let rest for about 10-15 minutes to draw out moisture and soften the onions.

    In a small bowl, whisk together the olive oil, sumac powder, lemon juice, and honey (if using) until well combined.

      After the onions have rested, rinse them under cold water to remove excess salt, then drain thoroughly. Pat them dry with a paper towel.

        Pour the sumac dressing over the onions and mix until all the slices are evenly coated.

          Allow the onions to marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for deeper flavor.

            Before serving, garnish with freshly chopped parsley for an extra burst of color and taste.
