2 medium red onions, thinly sliced

2 tablespoons olive oil

1 tablespoon sumac

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon red wine vinegar (or lemon juice)

Fresh parsley, chopped (for garnish)
