Ingredients

2 cups fresh strawberries, hulled and quartered

2 cups fresh peaches, peeled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup all-purpose flour

1/3 cup brown sugar, packed

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/3 cup unsalted butter, melted

Optional: vanilla ice cream for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit: In a large bowl, combine the quartered strawberries and sliced peaches. Add the granulated sugar, lemon juice, and vanilla extract, gently tossing to coat the fruit evenly. Pour this mixture into a greased 9-inch square baking dish or a similar-sized oven-safe dish.

Make the Crisp Topping: In a separate bowl, mix together the rolled oats, all-purpose flour, brown sugar, ground cinnamon, and salt. Drizzle the melted butter over the dry mixture. Stir until the ingredients are combined and crumbly.

Assemble the Crisp: Evenly spread the oat mixture over the fruit layer in the baking dish.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the fruit is bubbling around the edges.

Cool and Serve: Remove the crisp from the oven and let it cool for about 10 minutes. Serve warm, optionally with a scoop of vanilla ice cream on top for an extra treat.
