Spinach and Feta Quesadillas (20 minutes)

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

1 tablespoon olive oil

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional, for some heat)

Salt and pepper to taste

Salsa or sour cream for serving (optional)

Instructions
 

Prepare the Filling: In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for 30 seconds until fragrant.

    Add Spinach: Toss in the chopped spinach and cook, stirring frequently, until wilted, about 2-3 minutes. Season with salt, pepper, and red pepper flakes (if using). Remove the skillet from heat and let it cool slightly.

      Mix Cheeses: In a bowl, combine the cooked spinach and garlic mixture with the crumbled feta and shredded mozzarella. Mix until well combined.

        Assemble Quesadillas: Lay out two tortillas on a clean surface. Divide the spinach and cheese mixture evenly over one half of each tortilla. Fold the other half over the filling to create a semicircle.

          Cook Quesadillas: Wipe out the skillet and place it back on medium heat. Lightly grease with a bit of olive oil if necessary. Cook each quesadilla for about 3-4 minutes on one side, or until golden and crispy. Carefully flip and cook for an additional 2-3 minutes on the other side.

            Slice and Serve: Remove quesadillas from the skillet and let them cool for a minute before slicing into wedges. Serve warm with salsa or sour cream on the side if desired.
