1 lb chicken breast, cut into bite-sized pieces

3 fresh jalapeno peppers, deseeded and chopped (adjust to taste)

4 cloves garlic, minced

1 small onion, finely chopped

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon cumin

1 teaspoon cayenne pepper (adjust for spice level)

1 teaspoon salt

1/2 teaspoon black pepper

1 cup chicken broth

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, mix the chicken pieces with smoked paprika, cumin, cayenne pepper, salt, and black pepper. Let marinate for at least 30 minutes to soak up the spices.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes. Then, add minced garlic and jalapenos, cooking for an additional 2 minutes until fragrant.

      Cook the Chicken: Add the marinated chicken to the skillet, and cook until browned on all sides, about 5-7 minutes. Make sure the chicken is cooked through and no longer pink in the center.

        Add Chicken Broth: Pour in the chicken broth and lime juice, bringing the mixture to a boil. Reduce heat and let simmer for 10-15 minutes, allowing the flavors to meld and the sauce to reduce slightly.
