1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

2-3 fresh jalapeno peppers, sliced (adjust based on heat preference)

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon salt (or to taste)

½ teaspoon black pepper

Juice of 1 lime

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Chicken: In a mixing bowl, combine the olive oil, minced garlic, ground cumin, smoked paprika, chili powder, salt, black pepper, and lime juice. Mix well to create a marinade. Add the chicken thighs to the bowl, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

    Prepare the Jalapenos: While the chicken is marinating, slice the jalapenos. You can remove the seeds for a milder flavor, or keep them in for extra heat.

      Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken thighs. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice sear. The internal temperature should reach 165°F (75°C).
