8 oz. fresh noodles (preferably egg or rice noodles)

4 cloves garlic, minced

2 tablespoons vegetable oil

1 tablespoon sesame oil

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon chili paste (adjust to taste)

1 teaspoon sugar

1/4 cup green onions, chopped

1/4 cup fresh cilantro, chopped

1 tablespoon toasted sesame seeds (for garnish)

Salt and pepper to taste

Cook the Noodles: Bring a large pot of salted water to a boil. Cook the fresh noodles according to package instructions, usually about 2-3 minutes, until tender but still firm. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a small bowl, mix together the soy sauce, oyster sauce, chili paste, and sugar. Taste and adjust heat by adding more chili paste if desired.

      Sauté the Garlic: In a large pan or wok, heat the vegetable oil and sesame oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.

        Combine Noodles and Sauce: Add the cooked noodles to the pan with the sautéed garlic. Pour the prepared sauce over the noodles and toss well to combine, ensuring the noodles are evenly coated in the spicy sauce.
