Skillet Banana Fritters

Ingredients
  

2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup sugar

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate chips (optional)

Oil for frying (such as vegetable or coconut oil)

Powdered sugar for dusting (optional)

Instructions
 

In a mixing bowl, combine the mashed bananas, flour, sugar, baking powder, cinnamon, and salt. Stir until well incorporated.

    In another bowl, whisk together the milk, egg, and vanilla extract. Add the wet ingredients to the banana mixture and stir until just combined. If using, fold in the chocolate chips.

      Heat a skillet over medium heat and add enough oil to coat the bottom (about 1/4 inch deep). Allow the oil to heat for a couple of minutes—it should shimmer but not smoke.

        Using a tablespoon or small scoop, drop dollops of the banana batter into the hot skillet, leaving space between each fritter.

          Cook each fritter for about 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes until browned and cooked through.

            Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.

              Dust the fritters with powdered sugar before serving (if desired). Enjoy them warm with syrup, honey, or your favorite dipping sauce.
