Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 medium onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

2 cloves garlic, minced

1 teaspoon ginger, minced

2 green onions, chopped (for garnish)

Salt and pepper to taste

Cooked rice or noodles (for serving)

Instructions

Marinate the Steak: In a large bowl, combine the sliced flank steak, soy sauce, oyster sauce, and cornstarch. Mix well until the steak is evenly coated. Let it marinate for at least 20 minutes while you prepare the vegetables.

Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat until shimmering.

Cook the Steak: Add the marinated steak to the hot skillet in a single layer (you may need to do this in batches). Sear for about 2-3 minutes on each side until browned but not fully cooked. Remove the steak from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion, red bell pepper, green bell pepper, minced garlic, and ginger. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

Combine and Finish Cooking: Return the partially cooked steak to the skillet with the vegetables. Stir everything together and cook for an additional 2-3 minutes until the steak is cooked through and the vegetables are well combined. Season with salt and pepper to taste.

Serve: Remove from heat and sprinkle with chopped green onions. Serve the sizzling pepper steak stir-fry over cooked rice or toss with noodles for a complete meal.
