1.5 lbs boneless, skinless chicken thighs

1 ripe pineapple, peeled and diced

2 tablespoons olive oil

2 tablespoons adobo sauce from a can of chipotle peppers

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

8 small corn tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sliced red onion (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Marinade: In a large bowl, combine the olive oil, chipotle adobo sauce, smoked paprika, ground cumin, garlic powder, onion powder, salt, and pepper. Mix well to create a flavorful marinade.

      Marinate Chicken: Add the chicken thighs to the bowl and coat them thoroughly in the marinade. Let them marinate for at least 20 minutes (or up to 2 hours in the refrigerator for a deeper flavor).

        Sheet Pan Preparation: On a large sheet pan, arrange the marinated chicken thighs in a single layer. Scatter the diced pineapple around the chicken.

          Bake: Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is nicely charred. The pineapple should be golden and caramelized.

            Rest and Slice: Once cooked, remove the sheet pan from the oven and let the chicken rest for about 5 minutes. Then slice the chicken into strips.

              Warm the Tortillas: While the chicken rests, you can warm the corn tortillas either on a skillet over medium heat for about 30 seconds on each side or wrap them in foil and place them in the oven for a few minutes.

                Assemble Tacos: To assemble each taco, place a few strips of chicken on a tortilla, top with caramelized pineapple pieces, sliced red onion (if using), and sprinkle with fresh cilantro.
