Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

1 lb boneless chicken thighs, diced

2 tbsp soy sauce (plus extra for serving)

1 tbsp mirin

2 tbsp vegetable oil

1 medium onion, diced

3 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, and corn)

2 large eggs, beaten

3 green onions, chopped

1 tsp sesame oil

1 tbsp BBQ sauce (preferably a Japanese-style)

Salt and pepper to taste

Toasted sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine diced chicken thighs with soy sauce, mirin, and a sprinkle of salt and pepper. Let it marinate for at least 15 minutes to infuse the flavors.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes. Remove from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced onion and sauté for about 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

        Add Vegetables: Toss in the mixed vegetables and stir-fry for about 3-4 minutes until heated through.

          Scramble the Eggs: Push the vegetable mixture to the side of the skillet, and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix everything together.

            Combine Rice and Chicken: Add the cooked rice to the skillet, followed by the cooked chicken and BBQ sauce. Pour in the sesame oil and gently stir-fry everything together for another 3-4 minutes. Ensure the rice is heated through and well combined with the chicken and vegetables.

              Garnish & Serve: Remove from heat and stir in the chopped green onions. Serve hot, drizzled with extra soy sauce to taste and topped with toasted sesame seeds.
