Sausage Tortellini Soup

1 pound Italian sausage (mild or spicy, according to preference)

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried basil

1 teaspoon dried oregano

6 cups chicken or vegetable broth

1 (14.5 oz) can diced tomatoes, undrained

1 (9 oz) package refrigerated cheese tortellini

2 cups fresh spinach

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley, chopped (for garnish)

1 tablespoon olive oil

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic, diced carrots, and celery to the pot. Cook until the vegetables are slightly softened, about 5-6 minutes.

      Remove the casing from the Italian sausage and crumble it into the pot. Cook until the sausage is well browned, about 6-7 minutes. Stir occasionally to break up the sausage into smaller pieces.

        Sprinkle in the dried basil and oregano, stirring to combine and let the spices bloom for about a minute.

          Pour in the chicken or vegetable broth and the can of diced tomatoes (with their juices). Bring the mixture to a boil.

            Once boiling, add the tortellini to the pot and cook according to the package instructions (generally about 3-5 minutes).

              In the last couple of minutes of cooking, add the fresh spinach and stir until fully wilted.

                Season the soup with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese and chopped parsley.
