Salmon Crispy Rice

1 cup sushi rice

1 ¼ cups water

1 teaspoon rice vinegar

1 teaspoon sugar

½ teaspoon salt

1 pound fresh salmon, skin off

Salt and pepper, to taste

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon wasabi (optional)

1 avocado, sliced

1 scallion, thinly sliced

1 teaspoon sesame seeds

Nori sheets, cut into strips (for garnish)

Instructions
 

Cook the Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Alternatively, bring to a boil in a pot, cover, and simmer for 18-20 minutes until water is absorbed. Remove from heat and let it steam for additional 10 minutes.

    Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Allow the rice to cool to room temperature.

      Prepare the Salmon: Season the salmon fillet with salt and pepper. In a skillet over medium-high heat, add sesame oil. When hot, sear the salmon for 2-3 minutes on each side until cooked to your desired doneness. Remove from skillet and let it cool, then slice into bite-sized cubes.

        Form the Crispy Rice: In a clean non-stick skillet or large frying pan, heat a thin layer of oil over medium heat. Using your hands, form small squares or rectangles of cooled sushi rice and place them in the pan. Fry for about 2-3 minutes on each side until golden brown and crispy. Remove and place on a paper towel to drain excess oil.

          Assemble the Dish: On each crispy rice piece, layer a small amount of wasabi (if using), followed by a piece of seared salmon and top with a slice of avocado. Drizzle with soy sauce and sprinkle with sesame seeds and sliced scallions.

            Serve: Arrange the Salmon Crispy Rice on a serving platter, garnish with nori strips, and enjoy immediately!
