2 cups sushi rice

2.5 cups water

1 tbsp rice vinegar

1 tbsp sugar

1 tsp salt

8 oz fresh salmon, skinless and diced

1 avocado, sliced

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp green onions, finely chopped

1 nori sheet, cut into strips

1/2 cup panko breadcrumbs

Vegetable oil (for frying)

Wasabi and pickled ginger (for serving)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once done, let it sit for an additional 10 minutes.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice, being careful not to mash the grains. Allow the rice to cool to room temperature.

      Form the Rice Patties: Once the rice has cooled, take about 1/4 cup of rice and form small rectangular patties (approximately 2x3 inches). Place them on a parchment-lined tray.

        Coat with Panko: Place the panko breadcrumbs in a shallow dish. Lightly coat each rice patty in the panko, ensuring an even layer on all sides.

          Fry the Patties: In a deep skillet, heat vegetable oil over medium-high heat. Carefully add the rice patties, frying them until golden and crispy on both sides (about 2-3 minutes per side). Remove and drain on paper towels.

            Prepare the Salmon Topping: In a bowl, combine the diced salmon, soy sauce, sesame oil, and green onions. Gently mix until the salmon is evenly coated.
