Ingredients

2 cups ripe watermelon, cubed (seeds removed)

1 cup coconut milk (or almond milk)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust sweetness to taste)

1 teaspoon vanilla extract

Fresh mint leaves, for garnish

Slices of watermelon and berries, for topping

Instructions

Blend Watermelon: In a blender, puree the cubed watermelon until smooth. Strain through a fine mesh sieve if you prefer a smoother texture.

Mix Chia Pudding: In a medium bowl, combine the watermelon puree, coconut milk, honey (or maple syrup), and vanilla extract. Stir well to incorporate all the ingredients.

Add Chia Seeds: Stir in the chia seeds, making sure they're evenly distributed throughout the mixture. Let it sit for about 5 minutes, then stir again to prevent clumping.

Refrigerate: Cover the bowl and refrigerate the mixture for at least 2-3 hours, or ideally overnight. This allows the chia seeds to swell and thicken the pudding.

Prepare Breakfast Jars: Once the pudding has set, layer the chia pudding in jars or cups. Start with a spoonful of the pudding, followed by a layer of diced watermelon, then another layer of pudding. Repeat until the jars are filled.

Top and Garnish: Finish with fresh mint leaves, slices of watermelon, and a few berries on top for extra freshness and color.

Serve: Enjoy your refreshing watermelon chia pudding jar cold, perfect for a nourishing breakfast or snack!
