Peruvian Grilled Chicken with Creamy Green Sauce

Ingredients
  

For the Chicken:

4 boneless, skinless chicken thighs

3 tablespoons olive oil

Juice of 2 limes

4 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon paprika

1 teaspoon oregano

Salt and pepper to taste

For the Creamy Green Sauce (Aji Verde):

1 cup fresh cilantro leaves

1 medium jalapeño, seeded and chopped

1 tablespoon capers

2 cloves garlic

1 cup mayonnaise

Juice of 1 lime

Salt to taste

Water (to adjust consistency)

Instructions
 

Marinate the Chicken:

    - In a bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, oregano, salt, and pepper. Mix well.

      - Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

        Prepare the Creamy Green Sauce:

          - In a blender or food processor, combine cilantro, jalapeño, capers, garlic, mayonnaise, lime juice, and salt. Blend until smooth.

            - If too thick, add water a tablespoon at a time until desired consistency is reached. Taste and adjust seasoning as needed. Set aside.

              Grill the Chicken:

                - Preheat your grill to medium-high heat.

                  - Remove the chicken from the marinade and let any excess drip off.

                    - Grill the chicken thighs for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and has nice grill marks.

                      Serve:

                        - Remove the chicken from the grill and let rest for a few minutes.

                          - Slice if desired, and serve with a generous drizzle of creamy green sauce on top. Pair with rice, grilled vegetables, or a fresh salad.
