Ingredients
  

4 salmon fillets (about 6 oz each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 lemon, zested and juiced

1 cup cherry tomatoes, halved

1 cup baby spinach

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and oregano, cooking for another 1-2 minutes until fragrant.

    Cook Orzo: Add the orzo to the skillet and toast it lightly for about 1-2 minutes, stirring constantly. Pour in the vegetable or chicken broth, lemon juice, and lemon zest. Bring the mixture to a simmer.

      Add Tomatoes: Once the broth is simmering, add the halved cherry tomatoes and season with salt and pepper. Cook the orzo for approximately 8-10 minutes, stirring occasionally, until the liquid is mostly absorbed and the orzo is al dente.

        Cook Salmon: Push the orzo mixture to the sides of the skillet to create space in the center. Place the salmon fillets skin-side down in the center of the skillet. Season the tops with salt and pepper. Cover the skillet and allow the salmon to cook for about 6-8 minutes or until the salmon is cooked through and flakes easily with a fork.

          Add Spinach: Finally, stir in the baby spinach, allowing it to wilt for about 1-2 minutes. Adjust seasoning as necessary.

            Serve: Plate the orzo and salmon, drizzling any sauce left in the skillet on top. Garnish with fresh parsley and lemon wedges on the side.
