One Pot French Onion Pasta

12 oz (340 g) pasta (fettuccine or penne works well)

3 large onions, thinly sliced

4 cloves garlic, minced

1 tablespoon olive oil

4 cups vegetable broth

1 cup heavy cream

1 tablespoon soy sauce (or Worcestershire sauce)

1 teaspoon dried thyme

1 teaspoon sugar (to caramelize the onions)

Salt and pepper, to taste

1 cup grated Gruyère cheese (or Swiss cheese)

Fresh parsley, chopped for garnish

Caramelize the Onions: In a large pot, heat the olive oil over medium heat. Add the sliced onions and the sugar. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes. They should become golden brown.

    Add Garlic: Once the onions are caramelized, add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Combine ingredients: Pour in the vegetable broth, heavy cream, soy sauce (or Worcestershire sauce), dried thyme, salt, and pepper. Stir to combine.

        Cook the Pasta: Add the uncooked pasta to the pot. Bring to a boil, then reduce the heat to low, cover, and simmer, stirring occasionally, until the pasta is al dente and the liquid has thickened, about 10-12 minutes.

          Add Cheese: Once the pasta is cooked, remove the pot from the heat. Stir in the grated Gruyère cheese until it melts and becomes creamy. Adjust seasoning with more salt and pepper if needed.
