Ingredients
  

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

2 cloves garlic, minced

1 medium onion, chopped

1 bell pepper (red or green), diced

1 zucchini, sliced into half-moons

1 cup broccoli florets

1 cup cherry tomatoes, halved

1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)

Salt and pepper to taste

1 cup chicken broth (low sodium)

Fresh parsley, chopped (for garnish)

Lemon wedges (to serve, optional)

Instructions
 

Heat the Oil: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and chopped onion. Sauté for about 2-3 minutes, until the onions are translucent and fragrant.
