One-Pan Honey BBQ Chicken Rice

4 boneless, skinless chicken thighs

1 cup brown rice

2 cups chicken broth

1 cup BBQ sauce (store-bought or homemade)

1 small onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Chopped green onions for garnish

Sesame seeds for garnish

Prepare the Chicken: Season the chicken thighs with salt, pepper, garlic powder, and smoked paprika. Set aside.

    Sauté Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Add diced onion and bell pepper, cooking until they become soft and fragrant (about 5 minutes). Add minced garlic and stir for another minute.

      Brown the Chicken: Push the vegetables to the side of the skillet and add the seasoned chicken thighs. Sear them for about 3-4 minutes on each side until golden brown.

        Add Rice and Broth: Sprinkle the brown rice around the chicken in the skillet. Pour in the chicken broth and half of the BBQ sauce (reserve the other half for later). Stir gently to combine.
