1 can (20 oz) crushed pineapple in juice, drained and juice reserved

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup graham cracker crumbs

1/2 cup unsweetened coconut flakes

1/4 cup unsalted butter, melted

Fresh pineapple slices and mint leaves for garnish (optional)
