Mediterranean Chicken Pasta Salad

Ingredients
  

2 cups rotini pasta

1 lb boneless, skinless chicken breasts

1 tsp olive oil

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Juice of 1 lemon

2 tbsp red wine vinegar

1/4 cup extra virgin olive oil

1 tsp dried oregano

1 clove garlic, minced

Instructions
 

Begin by cooking the rotini pasta according to package instructions until al dente. Drain and rinse it under cold water to stop the cooking process. Set aside.

    While the pasta is cooking, season the chicken breasts with olive oil, salt, and pepper. Heat a grill pan or skillet over medium heat, and cook the chicken for about 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from the heat and let it rest for a few minutes before slicing into bite-sized pieces.

      In a large bowl, combine the cooked pasta, grilled chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

        In a small bowl, whisk together the lemon juice, red wine vinegar, extra virgin olive oil, dried oregano, and minced garlic. Pour this dressing over the pasta salad and toss gently to combine everything evenly.

          Taste the salad and adjust the seasoning with more salt, pepper, or lemon juice as desired.

            Chill in the refrigerator for at least 30 minutes to allow the flavors to meld before serving.
