Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

3 cups fresh spinach leaves

12 ounces pasta (fettuccine or penne)

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet over medium heat, add olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from skillet, and let rest for 5 minutes before slicing.

Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then, add the sun-dried tomatoes and stir for another minute. Pour in the heavy cream and chicken broth, stirring to combine. Add the Italian seasoning and bring to a gentle simmer.

Combine Ingredients: Stir in the grated Parmesan cheese until melted and creamy. Add the fresh spinach and allow it to wilt slightly. If the sauce is too thick, you can add reserved pasta water a little at a time until you reach the desired consistency.

Toss the Pasta: Add the cooked pasta and sliced chicken into the skillet. Toss everything together until well-coated with the creamy sauce.

Serve: Plate the pasta and chicken, garnishing with fresh basil leaves if desired. Serve immediately and watch as everyone falls in love with your Marry Me Chicken Pasta!
