Ingredients

1 ½ lbs flank steak or skirt steak

2 tablespoons chipotle peppers in adobo sauce, minced

3 tablespoons olive oil

3 cloves garlic, minced

Juice of 2 limes

1 tablespoon honey or agave syrup

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Fresh cilantro, chopped (for garnish)

Optional: lime wedges for serving

Instructions

Marinate the Steak: In a medium bowl, combine the minced chipotle peppers, olive oil, garlic, lime juice, honey, cumin, smoked paprika, salt, and black pepper. Whisk together until well blended.

Prepare the Steak: Place the steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish, then refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Preheat Grill or Pan: If you’re using a grill, preheat it to medium-high heat. If using a skillet, heat it over medium-high heat and lightly oil the pan.

Cook the Steak: Remove the steak from the marinade and allow excess marinade to drip off. Grill or pan-sear the steak for about 5-7 minutes per side for medium-rare, or until it reaches your desired level of doneness.

Rest the Steak: Once cooked, transfer the steak to a cutting board and let it rest for 5-10 minutes. This helps to retain the juices.

Slice and Serve: Thinly slice the steak against the grain. Garnish with freshly chopped cilantro and serve with lime wedges on the side.

Enjoy your meal: Serve the chipotle-style steak with warm tortillas, rice, or a fresh salad for a complete meal!
