Low Carb Mushroom & Spinach Cauliflower Rice

Ingredients
  

1 medium head of cauliflower, grated into rice-sized pieces

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (cremini or button)

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, diced

½ teaspoon salt (or to taste)

¼ teaspoon black pepper

½ teaspoon Italian seasoning (optional)

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish

Instructions
 

Prepare the Cauliflower Rice: Start by grating the cauliflower using a box grater or a food processor. Set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet and stir well. Cook for an additional 4-5 minutes until the mushrooms are softened and lightly browned.

        Add Garlic and Spinach: Stir in the minced garlic and cook for 30 seconds until fragrant. Then, add the chopped spinach, mixing until it wilts down, which should take about 2-3 minutes.

          Incorporate Cauliflower Rice: Add the grated cauliflower to the skillet. Mix well to combine all the ingredients. Season the mixture with salt, pepper, and Italian seasoning, if using. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.

            Finishing Touches: If desired, stir in the grated Parmesan cheese until melted and evenly distributed.

              Serve: Remove from heat and transfer to a serving bowl. Garnish with fresh parsley before serving warm.
