Lemon Garlic Shrimp Pasta With Spinach

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 tablespoons olive oil, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

Zest and juice of 1 large lemon

4 cups fresh spinach leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp in a single layer, seasoning with salt and pepper. Cook for 2-3 minutes on one side until pink, then flip and add the minced garlic and red pepper flakes. Cook for an additional 2-3 minutes, until shrimp are fully cooked. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil, then add the lemon zest and lemon juice. Stir well to combine. Add the spinach and cook for 2-3 minutes until wilted.

        Combine Pasta and Shrimp: Return the shrimp to the skillet and add the drained pasta. Toss everything together, adding reserved pasta water a little at a time to help form a light sauce. Adjust seasoning with additional salt and pepper, to taste.

          Serve: Remove from heat and garnish with fresh parsley and a generous amount of grated Parmesan cheese. Serve immediately and enjoy your delightful Lemon Garlic Shrimp Pasta!
