8 oz whole grain or gluten-free pasta

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, chopped

1 cup fresh basil leaves, torn

1/4 cup red onion, finely chopped

1/4 cup olive oil

2 tbsp fresh lemon juice

Zest of 1 lemon

1 tsp garlic powder

Salt and pepper to taste

Optional: 1/4 cup nutritional yeast for a cheesy flavor

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare Vegetables: While the pasta is cooling, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Place them in a large mixing bowl.

      Make the Dressing: In a small bowl, whisk together the olive oil, fresh lemon juice, lemon zest, garlic powder, salt, and pepper until well combined.

        Combine Ingredients: Add the cooked pasta, torn basil leaves, and nutritional yeast (if using) to the bowl with the vegetables. Drizzle the dressing over the top.

          Toss and Serve: Gently toss everything together until the pasta and vegetables are evenly coated with the dressing. Adjust salt and pepper to taste.
