Korean Ground Beef Bowl

1 lb ground beef

3 cloves garlic, minced

1 tablespoon ginger, freshly grated

1 tablespoon sesame oil

1⁄4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon gochujang (Korean red chili paste)

1/2 teaspoon black pepper

2 green onions, finely sliced

1 cup jasmine rice

2 cups spinach or bok choy

1 sesame seeds, for garnish

1 large carrot, julienned

2 eggs (optional)

Instructions
 

Cook Rice: Rinse jasmine rice under cold water until water runs clear. In a saucepan, combine rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Prepare Beef Mixture: In a large skillet over medium-high heat, add sesame oil. Once hot, add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.

      Add Ground Beef: Increase heat to high and add the ground beef to the skillet. Break it apart with a spatula and cook until browned and fully cooked through, about 5-7 minutes. Drain excess fat if needed.

        Season the Beef: Reduce heat to medium. Stir in soy sauce, brown sugar, gochujang, and black pepper. Mix well and let it simmer for another 5 minutes to absorb the flavors.

          Sauté Greens: In a separate pan, lightly sauté spinach or bok choy with a splash of water until wilted, about 3-4 minutes. Season with a pinch of salt.

            Cook Optional Eggs: If using, fry the eggs sunny-side up in a non-stick skillet for a couple of minutes until the whites are set but the yolk remains runny.

              Assemble Bowls: To serve, place a scoop of jasmine rice in each bowl. Top with the ground beef mixture, sautéed greens, and julienned carrots.
