Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, minced

1/4 cup soy sauce

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon gochujang (Korean chili paste)

1 egg, beaten

Salt and pepper to taste

Sesame seeds for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang

1 teaspoon lime juice

1 teaspoon honey

Salt to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare Meatball Mixture: In a large mixing bowl, combine the ground meat, breadcrumbs, green onions, minced garlic, minced ginger, soy sauce, sesame oil, brown sugar, gochujang, and the beaten egg. Season with salt and pepper. Mix well until all ingredients are well incorporated.

      Form Meatballs: Using your hands, form the mixture into bite-sized meatballs, about 1 inch in diameter. Place them on the prepared baking sheet, leaving space between each meatball.

        Bake Meatballs: Bake in the preheated oven for 15–20 minutes, or until the meatballs are cooked through and nicely browned.

          Make Spicy Mayo Dip: In a small bowl, whisk together mayonnaise, gochujang, lime juice, honey, and a pinch of salt until smooth. Adjust seasoning to taste.

            Serve: Once the meatballs are done, remove them from the oven and let them cool slightly. Serve them warm, sprinkled with sesame seeds and paired with the spicy mayo dip.
