Jamaican Shrimp Pasta: A Creamy Delight

12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 teaspoon jerk seasoning

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (adjust to taste)

1 cup coconut milk

1/2 cup heavy cream

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Zest and juice of 1 lime

Grated Parmesan cheese (for serving, optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until translucent. Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes.

      Cook the Shrimp: Sprinkle the shrimp with jerk seasoning, paprika, and cayenne pepper. Add the seasoned shrimp to the skillet, cooking for about 3-4 minutes until they turn pink and opaque. Remove the shrimp and set aside.

        Prepare the Creamy Sauce: In the same skillet, reduce the heat to low and pour in the coconut milk and heavy cream. Stir to combine, scraping up any bits from the pan. Allow to simmer for 5 minutes, letting it thicken slightly.

          Combine Ingredients: Add the cooked pasta and reserved pasta water to the sauce, tossing to coat. Return the shrimp to the skillet and mix gently. Season with salt, pepper, lime zest, and lime juice to taste. Allow everything to heat through for another 2 minutes.
