Ingredients

2 cups rolled oats

2 large apples (preferably Granny Smith or Honeycrisp), peeled and diced

1/2 cup unsweetened applesauce

2 cups almond milk (or milk of choice)

1/4 cup maple syrup or honey

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Fresh apple slices for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or a light coat of oil.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, and salt. If using walnuts, raisins, or dried cranberries, add them to the mixture as well.

Combine Wet Ingredients: In another bowl, whisk together the almond milk, applesauce, maple syrup (or honey), and vanilla extract until well-combined.

Add Apples: Fold the diced apples into the wet ingredients, mixing gently to ensure they are evenly distributed.

Combine Mixtures: Pour the wet mixture into the dry oat mixture, stirring until all ingredients are well incorporated.

Bake: Transfer the mixture to the prepared baking dish, spreading it out evenly. Top with fresh apple slices if desired. Bake in the preheated oven for 30-35 minutes, until the top is golden and the edges start to pull away from the side of the dish.

Cool and Serve: Remove the bake from the oven and let it cool for a few minutes before slicing into squares. Serve warm, and enjoy your healthy breakfast!
