2 cups rolled oats

2 ½ cups unsweetened almond milk (or any milk of your choice)

2 large apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup maple syrup (or honey)

1/4 cup unsweetened applesauce

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Fresh apple slices and extra nuts for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish with cooking spray or a little olive oil.

    Prepare the Wet Ingredients: In a large mixing bowl, combine the almond milk, maple syrup, applesauce, and vanilla extract. Mix well until fully combined.

      Mix the Dry Ingredients: In a separate bowl, combine rolled oats, ground cinnamon, baking powder, and salt. Stir to distribute the baking powder evenly.

        Combine Wet and Dry Ingredients: Gradually add the dry oat mixture to the wet ingredients, stirring until just combined. Fold in the diced apples and, if using, the chopped nuts and dried fruit.

          Pour into Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly. Top with additional apple slices and nuts, if desired.

            Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes or until the top is lightly golden and the oatmeal is set.
