1 cup apple cider

1 ½ cups all-purpose flour

1 cup granulated sugar

1 tsp baking powder

½ tsp baking soda

½ tsp kosher salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup unsweetened applesauce

2 large eggs

¼ cup unsalted butter, melted

1 tsp vanilla extract

Cinnamon sugar for coating (1 cup granulated sugar + 2 tsp ground cinnamon, mixed)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a standard donut pan with non-stick spray or a light coating of oil.

    In a small saucepan, bring the apple cider to a boil over medium heat. Lower the heat and let it simmer for about 10-15 minutes, or until it is reduced to about ½ cup. Set aside to cool.

      In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

        In a separate bowl, mix together the reduced apple cider, applesauce, eggs, melted butter, and vanilla extract until smooth.

          Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to over-mix.

            Spoon the batter into the prepared donut pan, filling each cavity about halfway.

              Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

                Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack.

                  While the donuts are still warm, roll them in the cinnamon sugar mixture to coat evenly.
