Honey Lime Chicken & Avocado Rice Stack

For the Honey Lime Chicken:

1 pound boneless, skinless chicken breasts

1/4 cup honey

3 tablespoons lime juice (freshly squeezed)

2 tablespoons soy sauce

2 garlic cloves, minced

1 teaspoon lime zest

1 teaspoon olive oil

Salt and pepper to taste

For the Avocado Rice:

1 cup jasmine rice

2 cups chicken broth (or water)

1 ripe avocado, diced

1 tablespoon lime juice

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

To Assemble:

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

Lime wedges for garnish

Extra cilantro for garnish

Instructions
 

Prepare the Chicken Marinade:

    In a bowl, whisk together honey, lime juice, soy sauce, minced garlic, lime zest, olive oil, salt, and pepper. Add the chicken breasts, ensuring they are well coated in the marinade. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours.

      Cook the Rice:

        Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine rice and chicken broth (or water) and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes, or until rice is fully cooked. Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork and set aside.

          Prepare the Avocado Rice:

            In a large bowl, combine the cooked rice, diced avocado, lime juice, cilantro, salt, and pepper. Gently mix until the avocado is well distributed throughout the rice without mashing it. Set aside.

              Cook the Chicken:

                Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.
