Ingredients
  

1 lb boneless, skinless chicken thighs, diced

2 cups cooked jasmine rice (preferably day-old)

3 tbsp soy sauce

2 tbsp teriyaki sauce

2 tbsp vegetable oil

1 tbsp sesame oil

2 cloves garlic, minced

1 small onion, finely chopped

1 cup mixed frozen vegetables (peas, carrots, corn)

2 large eggs, lightly beaten

3 green onions, chopped

Salt and pepper to taste

Optional: hibachi-style dipping sauce for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken thighs with 1 tablespoon of soy sauce, 1 tablespoon of teriyaki sauce, and a pinch of salt and pepper. Let it marinate for at least 15 minutes while you prepare other ingredients.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until fully cooked and golden brown. Remove from the skillet and set aside.

      Scramble the Eggs: In the same skillet, add a bit more oil if needed, then pour in the beaten eggs. Scramble them until just set, then transfer to a plate and set aside.

        Sauté the Vegetables: Return the skillet to the heat and add the remaining vegetable oil. Sauté the garlic and onion until fragrant and translucent (about 2-3 minutes). Then, add in the mixed vegetables and cook for another 3-4 minutes until heated through.

          Fried Rice: Stir in the day-old rice, breaking up any clumps. Add the remaining soy sauce and teriyaki sauce, mixing everything well. Cook for about 5 minutes, allowing the rice to crisp slightly on the bottom if desired.

            Combine Ingredients: Add the cooked chicken back into the skillet, along with the scrambled eggs and chopped green onions. Stir to combine well, cooking for an additional 2 minutes to heat everything through. Adjust seasoning with salt and pepper to taste.

              Serve: Serve hot, optionally with hibachi-style dipping sauce on the side.
