Hawaiian Shoyu Chicken

2 lbs chicken thighs (bone-in, skin-on for extra flavor)

1/2 cup soy sauce (preferably shoyu)

1/4 cup brown sugar

1/4 cup honey

1/4 cup rice vinegar

4 cloves garlic (minced)

1 tablespoon fresh ginger (grated)

2 green onions (sliced, plus more for garnish)

1 teaspoon sesame oil

1/2 teaspoon black pepper

1 teaspoon crushed red pepper flakes (optional for heat)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine soy sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, green onions, sesame oil, black pepper, and crushed red pepper flakes (if using). Stir well until the sugar is dissolved.

    Add the Chicken: Place the chicken thighs into the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Prepare for Baking: Remove the chicken from the marinade and place it in a baking dish, skin-side up. Reserve the marinade in a saucepan.

          Bake the Chicken: Bake the chicken in the preheated oven for about 30-35 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.

            Make the Sauce: While the chicken is baking, simmer the reserved marinade in the saucepan over medium heat for 10-15 minutes or until it thickens slightly. This will become your glaze.

              Glaze the Chicken: In the last 10 minutes of baking, brush some of the thickened glaze over the chicken for extra flavor and shine.

                Serve: Once cooked, remove the chicken from the oven, drizzle with more glaze, and garnish with sesame seeds and additional sliced green onions. Serve it with steamed rice and a side of tropical fruit for an authentic Hawaiian experience.
