Ingredients

1 lb ground turkey

2 tablespoons vegetable oil

1 medium onion, thinly sliced

2 cloves garlic, minced

1 cup broccoli florets

1 red bell pepper, julienned

1 cup snap peas

½ cup grated carrots

¼ cup teriyaki sauce

1 tablespoon soy sauce

1 teaspoon sesame oil

½ teaspoon ground ginger

3 green onions, chopped

Sesame seeds for garnish

Cooked rice or quinoa, for serving

Instructions

Prep the Ingredients: Start by preparing all your vegetables. Thinly slice the onion, julienne the red bell pepper, and wash the broccoli florets and snap peas. Grate the carrots and chop the green onions.

Cook the Turkey: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground turkey and cook, breaking it up with a spatula until browned and fully cooked, about 5-7 minutes.

Add Aromatics: Add the sliced onion and minced garlic to the skillet. Sauté for about 2 minutes until the onion becomes translucent and the garlic is fragrant.

Incorporate Vegetables: Stir in the broccoli florets, red bell pepper, snap peas, and grated carrots. Cook for another 3-5 minutes until the vegetables are tender-crisp.

Make the Sauce: In a small bowl, mix the teriyaki sauce, soy sauce, sesame oil, and ground ginger. Pour this sauce over the turkey and vegetable mixture, stirring well to evenly coat everything.

Simmer: Allow the stir fry to simmer for an additional 2-3 minutes, letting the flavors meld together.

Serve: Remove from heat, sprinkle chopped green onions and sesame seeds on top for garnish. Serve immediately over cooked rice or quinoa for a hearty meal.
