1 lb ground turkey

2 medium sweet potatoes, diced

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper to taste

1 cup spinach, roughly chopped

1 avocado, sliced (for topping)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Cook for about 8-10 minutes, stirring occasionally, until they begin to soften and brown.

    Add Aromatics: Add the chopped onion and bell pepper to the skillet. Sauté for about 5 minutes until the vegetables are softened. Stir in the garlic and cook for an additional minute until fragrant.
