1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 small red onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup black beans, drained and rinsed

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

¼ teaspoon salt (or to taste)

¼ teaspoon black pepper (or to taste)

2 tablespoons olive oil

½ cup chicken broth (or vegetable broth)

¼ cup fresh cilantro, chopped (for garnish)

Optional toppings: avocado slices, lime wedges, or cheese

Prep the Sweet Potatoes: Begin by peeling and dicing the sweet potatoes into small cubes. This will help them cook evenly and more quickly.

    Cook the Turkey: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spatula. This should take about 5-7 minutes. Season with salt, pepper, cumin, smoked paprika, and chili powder. Stir well and cook for another minute.
