Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup cooked black beans, drained and rinsed

1 cup corn (frozen or canned)

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1/2 cup chicken broth

1/2 cup shredded cheddar cheese (optional)

2 tbsp olive oil

Fresh cilantro, for garnish

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Cook the sweet potatoes: Boil diced sweet potatoes in a pot of salted water for about 10 minutes, or until tender. Drain and set aside.

      Sauté the turkey: In a large skillet, heat olive oil over medium heat. Add the onion and cook until translucent, about 5 minutes. Add garlic and cook for an additional minute.

        Brown the turkey: Add the ground turkey to the skillet; cook until browned and fully cooked through, breaking it apart with a spoon, about 8-10 minutes.

          Combine ingredients: Stir in the cooked sweet potatoes, black beans, corn, cumin, smoked paprika, salt, pepper, and chicken broth. Mix well to combine.

            Transfer to baking dish: Pour the mixture into a greased casserole dish, spreading it evenly across the bottom. If using, sprinkle cheddar cheese on top.

              Bake: Place the casserole in the preheated oven and bake for about 20-25 minutes, or until heated through and the cheese is bubbly and golden.

                Garnish and serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh cilantro before serving.
