Ingredients
  

1 lb ground turkey

2 medium bell peppers (any color), diced

1 small onion, finely chopped

2 cloves garlic, minced

1 cup corn (fresh or frozen)

1 can (14 oz) diced tomatoes, drained

2 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley for garnish (optional)

Cooked rice or quinoa for serving

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and cook for about 3 minutes, or until softened.

    Add Garlic: Stir in the minced garlic and sauté for an additional 1 minute until fragrant.

      Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes, stirring occasionally, until the turkey is browned and cooked through.

        Incorporate Peppers & Spices: Add the diced bell peppers to the turkey mix, along with the chili powder, cumin, smoked paprika, salt, and pepper. Cook for another 4-5 minutes until the peppers are tender.

          Add Corn and Tomatoes: Mix in the corn and drained diced tomatoes. Let the mixture simmer for another 5 minutes, allowing the flavors to meld together.

            Serve: Spoon the turkey and pepper mixture over cooked rice or quinoa. Garnish with fresh cilantro or parsley if desired.
