1 pound large shrimp, deveined and peeled

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper (optional)

Salt and pepper to taste

Juice of 1 lime

For the Corn Salsa:

1 cup corn kernels (fresh, frozen, or canned)

1 medium tomato, diced

½ red onion, finely chopped

1 jalapeño, seeded and diced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Creamy Garlic Sauce:

½ cup Greek yogurt or sour cream

2 tablespoons mayonnaise

2 garlic cloves, minced

1 tablespoon lemon juice

Salt and pepper to taste

For Assembly:

2 cups cooked rice (white or brown)

1 avocado, sliced

Lime wedges for serving

Fresh cilantro for garnish

Marinate the Shrimp: In a large bowl, combine the shrimp, olive oil, smoked paprika, garlic powder, cayenne pepper (if using), salt, pepper, and lime juice. Toss well to coat. Let the shrimp marinate for 15-20 minutes.

    Prepare Corn Salsa: In another bowl, mix the corn, diced tomato, red onion, jalapeño, cilantro, lime juice, and salt. Stir until well combined. Taste and adjust seasoning if necessary. Set aside.
