1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

For the Corn Salsa:

1 cup corn kernels (fresh, frozen, or canned)

1 medium tomato, diced

1/4 red onion, finely chopped

1 jalapeño, minced (optional)

1 tablespoon fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Creamy Garlic Sauce:

1/2 cup sour cream

2 tablespoons mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

For Serving:

2 cups cooked rice (brown or white)

1 avocado, sliced

Lime wedges for garnish

Additional cilantro for garnish

Instructions
 

Marinate the Shrimp: In a bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the shrimp and toss to coat. Marinate for at least 15-30 minutes.
