For the Chicken Marinade:

500g (1 lb) chicken breast, cut into bite-sized pieces

200g (7 oz) plain yogurt

2 tablespoons lemon juice

3 cloves garlic, minced

1 tablespoon ginger paste

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

1 teaspoon turmeric powder

1 teaspoon chili powder (adjust to taste)

Salt to taste

For the Tikka Masala Sauce:

2 tablespoons vegetable oil or ghee

1 large onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger paste

1 green chili, slit lengthwise (optional)

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

1 teaspoon turmeric powder

1 can (400g or 14 oz) crushed tomatoes

200ml (7 oz) coconut milk or heavy cream

Fresh cilantro, chopped (for garnish)

Salt to taste

1 teaspoon sugar (optional, to balance acidity)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the yogurt, lemon juice, minced garlic, ginger paste, ground cumin, coriander, garam masala, turmeric, chili powder, and salt. Add the chicken pieces and make sure they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

    Cook the Chicken: Preheat your grill or a skillet over medium-high heat. Skewer the marinated chicken or cook directly in the skillet for about 5-7 minutes until cooked through and slightly charred. Remove from heat and set aside.

      Prepare the Sauce: In a large pot or deep skillet, heat the vegetable oil or ghee over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.

        Add Aromatics: Stir in minced garlic, ginger paste, and slit green chili. Sauté for another minute until fragrant before adding the ground spices (cumin, coriander, garam masala, and turmeric). Cook for about 1-2 minutes, stirring frequently.

          Tomatoes and Cream: Add the crushed tomatoes and bring the mixture to a simmer. Cook for about 10 minutes until the sauce thickens, then stir in the coconut milk or heavy cream. Let simmer for an additional 5 minutes.

            Combine the Chicken with the Sauce: Add the grilled chicken pieces to the sauce and mix well. If needed, adjust the seasoning with salt and sugar. Allow to simmer for another 5-10 minutes so the flavors meld together.

              Garnish and Serve: Remove from heat and garnish with fresh cilantro. Serve the Chicken Tikka Masala hot with basmati rice or naan bread for a complete meal.
