1 pound sirloin steak, cut into bite-sized cubes

1 pound baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon fresh parsley, chopped (for garnish)

Salt and pepper to taste

2 tablespoons olive oil

½ teaspoon paprika (optional)

Prep the Potatoes: Begin by preheating your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, pepper, and paprika (if using). Spread the potatoes in a single layer on a baking sheet and roast in the preheated oven for about 25-30 minutes, or until golden brown and tender, turning once halfway through.

    Season the Steak: While the potatoes are roasting, season the steak cubes with salt and pepper on all sides.
